This one-pan chicken and veg traybake is a simple dinner for two. Chicken breasts, courgette, red pepper, red onion and baby potatoes are tossed with olive oil and mixed dried herbs, then roasted together on one large tray. One tray also means one washing-up job.
Everything roasts in the oven together, so once the tray goes in, the only jobs left are turning everything halfway through and checking the chicken at the end.
It's one of 18 recipes in The Recipe for Health, our new collection of simple recipes for everyday UK kitchens.
Serves 2 · 10 minutes prep · 30 minutes in the oven at 200°C (fan 180°C)
Ingredients
- 2 chicken breasts
- 1 courgette, chopped
- 1 red pepper, chopped
- 1 red onion, cut into wedges
- 200g baby potatoes, halved
- 1 tbsp olive oil
- 1 tsp mixed dried herbs
You will also need a large baking tray.
How to make this chicken and veg traybake
- Heat the oven. Preheat the oven to 200°C (fan 180°C). Use 200°C for a conventional oven, or 180°C if your oven has a fan. Turn it on before you start preparing the vegetables, so it is up to temperature when the tray is ready to go in.
- Toss everything on the tray. Toss all the ingredients together on a large baking tray with the oil and herbs. The vegetables should already be prepared as the ingredient list says: the courgette and red pepper chopped, the red onion cut into wedges and the baby potatoes halved. Tossing them with the chicken, olive oil and mixed dried herbs coats every piece.
- Roast for 30 minutes. Spread out in a single layer and roast for 30 minutes, turning halfway. A single layer means the pieces sit side by side on the tray rather than piled on top of each other. Halfway is after about 15 minutes: take the tray out, turn the pieces over, then put it back in the oven for the remaining time.
- Check the chicken. Check the chicken is cooked through before serving. Cooked through means that when you cut into the thickest part, the chicken is steaming hot all the way through, none of the meat is pink and any juices run clear.
